Many people believe that cellulite-the fat that often collects on the hips and legs-is especially resistant to dieting. This dimpling of the skinis created by the combination of protein fibers and fat tissue; the former binds, the latter expands, creating the appearance of an unevenly stuffed mattress, which means eliminating the underlying fat and thus taking the tension off the fibers. This will cause the skin to become smooth.
